Are you flooded with an abundance of zucchini growing in your garden? Do you need a new recipe that incorporates this squash? Here’s a recipe that will have even the kids on board. It’s a sandwich you can pack for outings or eat at home.

Jersey Fresh Zucchini
Flatbread Sandwiches

5 min. prep / 20 min. cook time

2 Jersey Fresh zucchinis

1 1/2 cups shredded mozzarella cheese

1/2 tsp. garlic powder

1/4 tsp. black pepper

olive oil spray

sandwich toppings (we used turkey, mayo, Jersey Fresh lettuce, and Jersey Fresh tomatoes) 

Using a slicer, carefully slice Jersey Fresh zucchini into thin disks.

Line a baking sheet with parchment paper and preheat your oven to 400°F.

Sprinkle mozzarella cheese on the baking sheet in a thin, even layer.

Lay out zucchini disks over the cheese and lightly mist with olive oil spray.

Season with garlic powder and black pepper.

Bake in the oven until crispy (about 18-20 minutes).

Let cool for a few minutes, then lightly lift the edges of the flatbread.

Cover with another sheet of parchment paper and flip the flatbread.

Slice the flatbread into strips and plate.

Add your favorite sandwich topping to half of the flatbread.

Close to serve.
