The start of the growing season here in the Garden State is almost here, with some of the first produce at farm markets in Cumberland County being the lettuces, kale, asparagus, and strawberries. Blueberry Jam and Brie Toast

1 tbsp. butter, divided

2 slices sourdough bread

2 oz. mascarpone cheese

4 tbsp. Jersey Fresh blueberry jam

2 oz. Jersey Fresh Brie

Jersey Fresh honey, to taste

½ cup Jersey Fresh arugula 

Preheat large skillet over high heat. Preheat oven to 400 degrees. 

Butter one side of each slice of bread with ½ tablespoon butter. Place bread slices butter side down in skillet. Cook 1-2 minutes or until bottom is toasted golden brown. Do not turn bread over.

Transfer bread slices, cooked side down, to ungreased cookie sheet. Spread a thin layer of mascarpone over each slice. Top each slice with about 2 tablespoon of blueberry jam.

Divide Brie evenly between 2 slices and place on top of blueberry spread. Bake sandwiches in oven about 10 minutes or until cheese is melted

Transfer sandwiches to serving plates. Drizzle 1 teaspoon honey over each sandwich. Top each with ¼ cup arugula E
