Just a few months ago, after our late April frost, it was suspected that the peach harvest here in South Jersey would be adversely affected and that possibly all of the peaches had frozen. Happily, many peaches survived and it’s time to enjoy Jersey peaches with these two recipes.

Roasted Peach Lemonade
5 min. prep. / 25 min. cook time
3 medium Jersey Fresh peaches, pitted and sliced in half (overripe peaches work great in this recipe)
1 tbsp. sugar
4 cups lemonade, homemade or store-bought
lemon, cut into slices for garnish|
1. Preheat oven to 400 degrees.
2. Place peach halves skin side down on a baking sheet and sprinkle with sugar.
3. Roast for 25 minutes; remove skins.
5. Add peaches and enough lemonade to cover into a blender. Puree until foamy.
6. Pour pureed mixture into a pitcher. Top with rest of the lemonade. Chill completely.
7. Stir before pouring over ice. Garnish with lemon slice.
Peach Tomato Corn Salad

• 1 cup Jersey Fresh peach, diced
• 2 Jersey Fresh large beefsteak tomatoes, each cut into 16 wedges
• 1 cup Jersey Fresh sweet corn kernels
• ¼ tsp. Kosher salt
• 2 ounces feta cheese, crumbled (about ½ cup) – we used Sugar Maple Jerseys Feta cheese
• ¼ tsp. black pepper
• ¼ cup Jersey Fresh Honey Vinaigrette
Dressing:
• ¼ cup canola oil
• 1/3 cup balsamic vinegar (regular or white)
• 2 tbsp. Jersey Fresh honey
• 2 tsp. Jersey Fresh shallot, minced
• ¼ tsp. Kosher salt
• ¼ tsp. pepper
1. For dressing: combine all ingredients in a clean jar and cover with lid. Shake until fully combined.
2. For salad: in a large bowl, combine peaches, tomatoes, and corn. Sprinkle in salt. Drizzle with ¼ cup of vinaigrette and toss to coat. Distribute salad on large serving plate and top with feta and sprinkle with pepper.
NOTE: This is also great as a dip. Instead of cutting the tomatoes into wedges, dice them up and serve with tortilla chips!
