Despite some earlier reports that there would be no Jersey peaches this year due to the late freeze experienced here, some area farmers are harvesting a crop. Here are two recipes that feature this Jersey favorite.

Jersey Peach Bruschetta

25 min. prep. / 18 min. cook time

1 baguette, cut into 1/4 inch thick slices

1/4 cup olive oil, divided

3 large Jersey Fresh peaches (we used both white and yellow)

2 Tbsp. Jersey Fresh basil, chiffonade

1 tsp. apple cider vinegar

1/4 tsp. Kosher salt

1/4 cup Jersey Fresh honey

1 tsp. hot sauce, or more as desired (we used Hank’s “so pitted” hot sauce made with Jersey peaches)

4 oz. goat cheese

1. Preheat the oven to 350 degrees.

2. Place baguette slices on a parchment-lined backing sheet. Brush both sides with 3 Tbsp. of the olive oil. Bake for 15 to 18 minutes or until golden brown

3. In a medium bowl, add the peaches, basil, salt and 1 Tbsp. olive oil. Mix gently to combine.

4. In a small bowl, add vinegar, honey and hot sauce. Whisk together adding more hot sauce to taste.

5. Spread goat cheese on baguette slices. Spoon the peach basil mixture on top of the goat cheese. Drizzle with the hot honey. Serve immediately.


Peach Salsa

20 min. prep. / 0 min. cook time

2 large Jersey Fresh tomatoes, diced

1 green bell pepper, seeded and diced

2 Jersey Fresh jalapenos, seeded and diced

1 medium Jersey Fresh onion, diced

4 Jersey Fresh peaches, diced

1/2 bunch Jersey Fresh cilantro, chopped

2 Tbsp. lime juice

1 1/2 tsp. salt

1/4 tsp. pepper

1. Combine all the diced and chopped Jersey Fresh fruits, vegetables, and herbs in a large bowl. Season with salt and pepper. Mix well.

2. Can be eaten right away or let sit for a few hours before serving. Serve with tortilla chips or on top of grilled fish, chicken, pork, etc.
